Sometimes you don’t get a chance to take a good photo before something this tasty is demolished.
This pastrami is a gentleman’s 6.
2025 is going to be the year I nail this.
The ground is still frozen.
As are my toes.

Day late Valentine's Day dinner. Smoked some steaks, beef tip marinated in soy, garlic, pepper. Not pictured filet mignon, garlic, salt, pepper and butter. So good.

The funniest thing is when someone is a "secret" #smoker and they think they're hiding it from everybody. No, people are just too polite to let you know how obvious it is. You absolutely 100% cannot hide that you #smoke, the smell is distinct and you can't perfume it away. No, your gum and cologne don't hide it. It pierces through that stuff. Yes, everybody knows, even kids.
#Smoked a #pork butt today for some delicious future meals. One of my favorite make ahead dishes. I’ll vacuum seal and freeze most of it. I was expecting to fight the cold air temp but it still took less than 12 hours for this butt to cook in the smoker. This is the first thing I’ve smoked since replacing the controller on my #smoker - it’s nice to have it back. And yea, I have stolen a few bits from future me even though I’ve eaten plenty of food already today. #bbq #meatsmoking #cooking
