Check @FediTips #feditips for how to set up lists. Disclosure: I don’t use lists myself, but people who know what they’re doing swear by them. I just scroll the whole fucking firehose but I’m retired so I’ve got lots of time. I also miss a lot that way. There’s always tradeoffs.

If you want to have posts with a particular topic appear in your timeline, search for a hashtag and then click the "Follow" button at the top of the search results for that tag. More info here: https://fedi.tips/how-do-i-follow-hashtags-on-mastodon-and-the-fediverse
Lists are something slightly different, they're like mini-timelines where you can put accounts if your main timeline is getting too full. There's more info about it here: https://fedi.tips/how-to-use-the-lists-feature-on-mastodon
