In my dream world, I would subscribe to such a "Magazin" and get it posted on my home feed. And to discover new stuff, I could simply search for a keyword and get a fitting magazine or community recommended.
Yes, that's exactly how it will work, see the screenshot below. Magazines will appear as groups if you follow them within Mastodon, with posts looking just like Mastodon posts.
At the moment there is just too much traffic overwhelming the Kbin servers, which weren't expecting this amount of attention due to the Reddit implosion.
Once things calm down and the developers are able to get more development done, it should work the way you are suggesting.

Reddit was, for a lot of stuff, a really nice user experience. Lots of subs where the primary point of contact for their respective communities. If we could get these communities away from spez and his cronies, I'd be delighted.

Yeah that's part I'm currently struggling with. Let's say I want to search for stuff related to one piece. On reddit this is simply joining /r/onepiece as a starting point. I have yet to find a good way to start this here...
Things work a bit differently on here, partly for safety reasons.
I'd recommend searching for all the hashtags you want and following them. This will automatically show posts with those tags in your home timeline, even from people you don't follow:
