Made a big pot of Bánh Canh for breakfast. It is a #Vietnamese comforting #udon #noodles #soup. We usually use pork hock/bones for broth & add Vietnamese ham/prawns atop. This is more frugal & simplified with ground pork. There's several different ways to make this dish; it's the broth that needs to be on point.

Making some Chinese spinach & mustard greens soup for myself & my Mom. It will help our bodies cool down from inside out. Many different Asian hot soups have nutritional benefits & natural body cool down effects.
Perfect day with my family on my only full day off this week. Mom & I went for nature walk in the morning. We tended to gardens together in afternoon, after a nice picnic lunch by the sea. I gave her a fun diamond painting kit & she's working on that now.
This evening, I tried out a Himalayan spicy chicken & vegetable soup recipe - thukpa. Made some naan bread to dip in soup too. I made it without noodles because the carb is the naan bread for this homemade version.

I made two pans & this is what's left after feeding my family. Chả Cua Trứng Hấp - #Vietnamese Egg & Crab #meatloaf.
You can eat it by itself. I eat it in a big bowl, with jasmine rice, pickled daikon/pickled carrots/cucumbers/Thai mint(all minced because I can't chew ATM) & nuoc cham sauce poured over everything.
I have 40 minutes to eat some food my #Korean friend cooked for me & dropped off while I was at work. Then, off to 3 LTC appointments to check on more clients.
My friend made me some jaengban jjajang 
It's a #Zhajiangmian #Chinese inspired Korean #noodles dish, featuring black bean sauce.

Simple & a real refreshing #dessert.
You can buy this from many street food stalls in Vietnam & many other places in South East Asia.
We just buy grass jelly in cans & add handpitted lychee fruits in.

Our family's version of the classic #Chinese #FishMaw #soup includes lots of real #crab meat & #PorkRinds. I eat it with some black pepper & a few dashes of red vinegar.

Minced up #MuiChoy - #preserved #mustard fried up with garlic & #GroundPork. Savoury, classic cultural dish that is simple to make. It goes very well with congee or steamed rice.

I'm saving the other large mui choy for a traditional braised pork dish.
This is some #MuiChoy with some #garlic cloves. Prepping to cook with it.
Mui choy is commonly used in classic #Hakka - #Teochew - #Cantonese #cuisines. It's one of the various kinds of #preserved #mustards that almost every #Chinese household has in their pantries. We usually use it to make our traditional Teochew braised pork or chicken or tofu(for our meat free days) dishes.
In our Teochew language, mui choy translates to "congee vegetables" - because it's eaten with congee often. Very classic, preserved veggie that is used in #cooking - all across South East Asia.

At a friend's now, to work on edits on some nonprofit grant applications. We are enjoying her homemade #Mexican #chicken #pozole #soup as we get the final edits done today.
We have a meeting in her backyard at 6pm with a few other #BIPOC #grassroots community builders to share/discuss & get some balls rolling on a few Fall/Winter #community events & workshops.

1st #NorthAfrican #Cookout at Fed Farm in #Vicwest. Absolutely fabulous community event! Lots of delicious #Moroccan & #Tunisian foods were cooked & given to guests to eat. Many stories shared. Beautiful acoustic music was played. Wonderful new local BIPOC connections were made & some lovely reunions occurred too. I had a really great time!
Most folks who came out had similar displacement backgrounds. Several of us are war survivors who lost our family homes overseas & are far from many family members(my Mom's side is stuck in remote offgrid village) who are still living in our homelands. It was good for our souls to be around fellow POC diaspora. We understand each other better than others do because of similar life experiences from before coming to Canada. We also faced similar struggles/racism when we came to Canada as refugees of wars.
I am looking forward to helping them out more at some future community connecting events & grassroots projects in the near future.
