Matthias1kg sourdough bread made with SBF, flaxseed meal (7%) and chickpea flour (7%). Two preferments are used: one with Lievito Madre and the other with rye sourdough. Cold proofed for 18hrs. IridieIch habe mein erstes Sauerteigbrot gebacken! Mit selbst angesetztem Sauerteig. Es war gar nicht kompliziert und hat auch nicht lange gedauert. Man muss nur ab und zu ein wenig Mehr und Wasser hinzufügen. Und was soll ich sagen, ich mag es! Einfach nur mit ein paar Würfeln Käse und Gemüse. Ich denke die Teigruhe (insgesamt 24h) macht das Brot bekömmlicher. Wenn ich mein Brot im geschlossenen Gusseisentopf bei 220°C eine Stunde backe, dann herausnehme und abkühlen lasse, dann ist das gut.
Kann ich das wohl irgendwie ähnlich gut hinbekommen, wenn ich es anwerfen und das Haus verlassen will? Den Timer vom Backofen auf... 30 Minuten? Und dann einfach im Ofen im Topf abkühlen lassen? Hat da jemand eigene(!) Erfahrungswerte?
