Baked pizza rested out from the oven and cut into eight slices. It’s brushed with a mixture of olive oil and tomato paste on top to give it some darker color.

The pizza dough is divided in half to create two balls, one for the bottom of the pizza, and one for the top layer. The eggplant and tomato filling is filled between the layers and it’s crimped together, and baked. Seen here, the pizza comes out of the oven and it’s allowed to rest and cool prior to cutting into portions and serving at the table.
