At some point I had acquired Hayashi sauce cubes and obviously completely forgotten about them. After my rediscovery I decided to use up the last three frozen Japanese hamburger steaks, root vegetables that were loitering in my fridge, and some red wine that by rights should have gone off already but was surprisingly fine.

The sauce cubes are fine as they come but the red wine made the sauce just so much better! The vegetables I used were an onion, 3 small carrots, 1 tiny parsnip and half a small kohlrabi. All of that over Japanese rice and we had a quick and delicious Friday dinner.

As it was Meatless Monday yesterday, we ate up the leftovers from the weekend today (but added something new too).

For some reason my brain decided on Japanese rice instead of long grain rice as per the meal planner but that was fine. There was still Mexican Puerco Pibil and Achiote chicken. There were tiger beans from yesterday’s salad; I took those and some sauce from the Puerco and heated them up in that, it worked a treat. I also had some mushrooms and Chinese broccoli in the fridge that needed to be eaten before they were past their best. I found an easy Chinese recipe, blanched the leafy broccoli and added fried quartered mushrooms before pouring some oyster sauce on top. Easy-peasy and despite being a different cuisine a very good match.

After the very red Mexican chicken we had another iteration of Mexican Puerco Pibil. The very distinct aroma I was wondering about two weeks ago is definitely not caused by the Annatto seeds which were in yesterday’s chicken and in today’s pork, so it must be the Habañero peppers after all - as the chicken didn’t have any of it.

We also had pan fried green asparagus and Szechuan green beans.

The reddest chicken I’ve ever made. This is a Mexican dish with achiote paste (made with Annatto seeds). It got marinated overnight and was cooked on the stove. Served with basmati rice and simple green beans. 😋

I need a tamagoyaki pan! I really like the Japanese rolled omelettes but in my round pans it’s not so easy to make them. Today I tried a version with nori inside, it was really tasty but it didn’t look great straight from the pan 😅 as I should have added a little more oil before adding the last of the egg mixture.

I served the tamagoyaki together with Japanese curry (made from curry roux cubes) and rice.

On the weekend I fought with Crêpes. I had made a mistake and used Bicarbonate of soda instead of baking powder, added a little lemon juice to start it off, and the dough ended up being too gassy, it didn’t want to be lifted, and tasted off. Can you believe it! After four Crêpes I decided to start again. Everything worked as expected after that.

In the meantime the husband prepared all the filling ingredients, and together we created 15 lovely Crêpes de Atun that went into the oven with plenty of butter. The green stuff in there was baby spinach and radish leaves, they worked perfectly with mustard, onions, chillies, tuna and a mix of Cheddar and Emmental cheese.

Two of these served with a side salad made for a great meal.

It would have been nice to have more of yesterday’s pickled mustard greens but they most likely wouldn’t have been right for today’s dish of Szechuan Dry Fried Green Beans as they were not from China. Therefore I followed the recommendation in the recipe to use Doubanjiang (fermented chilli bean paste) instead. I also threw in a handful of baby spinach leaves for effect and used more pork mince than stated to bulk it up for my hungry guys. We were very pleased.

Pickled mustard greens (Takana) fried rice with sweet chilli tofu puffs. I used a ready made pack of Takana but I’ve experimented before with creating a similar taste profile using spinach.

I experimented with a pack of tofu puffs and heated them up slowly adding some sweet chilli sauce at the end.

I still had some shiso (perilla) leaves in the fridge which we used to mop up the plates, grabbing the rice with them. Very yum!

On the weekend we had banana leaves in the house and therefore my husband made Puerco Pibil, a dish from the Yucatán peninsula.

While this was in the oven for four hours the apartment slowly filled up with the aroma. In the living room it seemed to me like I was mainly sensing Habañero pepper (and possibly tequila) but once I had entered the kitchen there was a lot more to it, which I attributed to the annato seeds and the other spices (cumin, allspice, cloves). I still haven’t decided what was what exactly but we are going to put it to a test in two weeks time when I‘ll make a chicken dish with achiote paste (a ready made paste mainly made of annato seeds) but without habañeros.

Not too long ago I realised that these days I seem to be able to smell how hot a dish or spice mix is going to be. If I get this particular aroma into my nose it’s definitely something to be careful with. Maybe it’s just the Habañero peppers that cause this, but it’s definitely new to me 😅 The others claim they don’t smell anything out of the ordinary. 🤔

That being said, served with long grain rice this dish was very edible in every way.

At lunch we had some leftover baked celeriac and I decided to fry it in beer dough. Somehow this didn’t work properly and the dough didn’t puff up. In the evening I used the cooled dough again, added a little more baking powder and flour, and the tofu came out perfectly. 🤔 Our son ate that with pasta and tonkatsu sauce, whatever floats his boat I guess… 😆

Trader Joe’s soy chorizo is a banger. Better than the pork chorizo from the local meat counter. A little dry, so you need some oil in the pan, but I would happily use this for my chorizo con huevo every time.

(Also, if you haven’t ever had chorizo con huevo, you’re missing one of life’s true comforts. I’ll thread my recipe.)

I’ve been reading about celeriac, people are raving about how good it is baked. I only knew celeriac as small soft cubes or slippery slices in my mother’s noodle soup which I hated as a child and therefore I had given a wide berth ever since. In the UK I tried fresh celery which has a similar taste profile (it is a related but different plant) and found it was OK to eat, definitely better than overcooked celeriac. That got me used to that particular taste again (that also works well in salads), so I thought maybe it is time to try actual celeriac, baked, not in soup. What can I say, baked for two hours it turned almost as soft as butter and with a Japanese style sauce it tasted really nice. 😊

We also tried Japanese potato salad for the first time. It was nice and refreshing, somewhat similar to my mother’s recipe but not quite as hearty.

All of this paired well with the asparagus meat rolls, rice and miso soup.

I wanted to cook aubergines today but somehow I tricked myself, there were none in the fridge even though I was sure that I had bought them. 🤔 However I had sardines in sesame sauce (yum, all the way from Japan via kokorocares.com), king oyster mushrooms and Pak Choi, so there were possibilities.

I decided to do something similar to the aubergine dish with the mushrooms, I halved and fried them and then put a miso glaze and Shichimi Togarashi on top and grilled them in the oven - I thought they were very good. The Pak Choi got blanched and served with a leftover portion of the aromatic sauce that I like so much.

In addition I dug out another product I had in the cupboard (also from kokorocares.com), a black vinegar paste that we used as rice seasoning and my husband was really happy with that one.

We tried out a Wafu pasta dish from the Kokorocares.com website today. (Wafu pasta is western style pasta with a Japanese style sauce.)

I made a few little changes, I replaced the zucchini with languishing kohlrabi and May turnip from my fridge, added more olive oil to create a proper emulsion with the pasta water, and at the end also added a dollop of Spicy Chili Shiitake Miso to the sauce that already had plenty of “mushroom broth tea”powder in it.

It was all full of umami and we really loved it. My son also simply loves the pasta Mondays (that are really Meatless Mondays) ☺️

After this morning’s trip to the polling station 🗳️, it was time to revisit this recipe from The Woks of Life: Chinese Pork and Pepper Stir-Fry. We had this dish before but it seems I never posted about it which is very strange as it’s fast and very delicious.

While the rice was doing it’s thing on the “Yumami” setting of the rice cooker, I cut a nice 300 g piece of pork shoulder into small pieces which were then tenderised (or velveted) with cornstarch and some seasonings.

I used a mix of Green chillies and green peppers as things get too hot for me otherwise.

All of this was stir-fried in the wok by my husband and came out perfectly.

I also made some lotus root crisps.
