Dominica is represented by Callaloo soup with dumplings, served with rice. I really do enjoy meeting familiar foods from other places. Shared trade routes meant both salt meat and dumplings were very familiar. This was a very fresh soup – it tasted green! Delicious!

Djibouti is represented by Djibouti Banana Fritters. Four ingredients. So simple. Very tasty! There have been a few variations on banana pancakes over the course of this journey and I’ve yet to find one I didn’t like!

Djibouti is represented by the National Dish of Djibouti – Skoudehkaris (lamb and rice stew). This was very tasty. Admittedly, lamb is not my favourite, and I don’t enjoy the smell of it cooking. But this was so good. The spice mix was transformative.

Denmark is represented by Flæskesteg (Roast Pork), Brunede Kartofler (Caramelised Potatoes), Rødkål (Red Cabbage), and Brun sovs (Danish brown gravy). This was delicious. A little running around for ingredients and some substitutions. I substituted green cabbage for red and had to make currant juice (blending currant jam with water and then straining). Worth the effort. Wonderful leftovers!

Czech Republic represented by Czech Kolache. Two yeasted doughs in one day was a bit ambitious. This dough was beautiful though! Admittedly, the last few recipes I have made that called for the stand mixer, I have kneaded by hand instead (easier to wash my hands than the mixer!). There is something therapeutic about working with good dough. These were very tasty. Delicious both warm and cold!

Czech Republic represented by Czech Beef Goulash (Hovězí guláš) with Bread Dumplings (Czech Houskové knedlíky). This was delicious! I steamed the dumplings, and they turned out so beautifully. Lovely dough to work with. The goulash has a nice kick.

Cyprus is represented by Cyprus Doukissa with condensed milk ganache (chocolate biscuit cake). This was simple and delicious. The recipe said you could choose to enjoy while the ganache was warm or to chill it again. Both were entirely tolerable!

Cyprus is represented by fried halloumi and fresh pita with a tomato, cucumber, and olive salad. This was my first time making pita bread. Beautiful dough. Fresh pita bread is totally different from store bought. So good. I will be making this again.

Croatia is represented by Soparnik, a Swiss Chard pie. Unfortunately, I didn’t have Swiss Chard, so I subbed spinach. This was quite tasty! I enjoyed working with this dough. It was eaten, as suggested, in one sitting!

Costa Rica is represented by Chifrijo (frijoles, chicharron, salsa lizano, & pico de gallo, served with rice, avocado, and corn chips). I made the salsa lizano from scratch rather than buying it and I will be putting that on EVERYTHING! So good. The salsa lizano recipe called for 1-2 chilies, I used a pinch or two of dried chilies from a local farm – wow! Very nice kick in a recipe that made 2 cups of salsa. I really enjoyed this dish, refreshing and hearty. So good!
