Food adventures continue!

Denmark is represented by Flæskesteg (Roast Pork), Brunede Kartofler (Caramelised Potatoes), Rødkål (Red Cabbage), and Brun sovs (Danish brown gravy). This was delicious. A little running around for ingredients and some substitutions. I substituted green cabbage for red and had to make currant juice (blending currant jam with water and then straining). Worth the effort. Wonderful leftovers!

Dessert edition!

Czech Republic represented by Czech Kolache. Two yeasted doughs in one day was a bit ambitious. This dough was beautiful though! Admittedly, the last few recipes I have made that called for the stand mixer, I have kneaded by hand instead (easier to wash my hands than the mixer!). There is something therapeutic about working with good dough. These were very tasty. Delicious both warm and cold!

Costa Rica is represented by Chifrijo (frijoles, chicharron, salsa lizano, & pico de gallo, served with rice, avocado, and corn chips). I made the salsa lizano from scratch rather than buying it and I will be putting that on EVERYTHING! So good. The salsa lizano recipe called for 1-2 chilies, I used a pinch or two of dried chilies from a local farm – wow! Very nice kick in a recipe that made 2 cups of salsa. I really enjoyed this dish, refreshing and hearty. So good!
