Pomax<p>Made rather a remarkable mistake today while baking some <a href="https://mastodon.social/tags/baguettes" class="mention hashtag" rel="nofollow noopener noreferrer" target="_blank">#<span>baguettes</span></a>. I was aiming for 200gr after baking, so I portioned 200gr before baking and didn't catch the mistake at any point despite going "these seem oddly thin" multiple times in the process... </p><p>Mind you: decent crust.</p><p>Mind you, v2: it's also like... 50 percent crust by volume.</p>

(Yes, I do have the pan in place during preheating. It's nice and hot and steam is generated - it just doesn't have much in the way of mass. But I have another one with more mass which I'm going to try today.)</p><p>Boiling water is interesting tho'.
