late afternoon with polish food and friends; a bit of Żubrówka bison grass vodka too
After many years of trial and error (mostly error) I have made a breakthrough.
I present to you: the gluten free pierogi!
The secret is tapioca flour
Shopped at a food sale at a local Polish Catholic church. Home with a load of pierogies (sauerkraut and mushroom, and potato and cheese), bigos, kielbasa, and stuffed cabbage for the freezer, and full of kielbasa and potato pancakes and pashki myself.
I got there fairly early but they were already out of kishka, which annoys me.
I'm making potato fishcakes and it struck me how similar in process and texture the fishcakes are to pierogi filling. You know, it's just mashed potatoes plus extra stuff.
You know where I'm going with this right

Went to Podhalanka for dinner last night. First time in about 12 years. It didn't disappoint! Old school Polish and enough leftovers for another meal. This place is a #Chicago treasure. blitz.
We now have two Polish delis in our high street, and I can't stop buying cured meats and smoked cheeses (also they make the best ketchup I've ever had)

Went for the Polish comfort food for dinner. My fav way to eat it is with boiled potatoes. I add a little bit of garlic to the kraut too. #polishfood #sauerkraut
Mmmm Cheesecake. This gorgeous one is from our local Polish shop and has a thin pastry base, a pastry lattice top, lemon glaze and many marinated sultanas and citrus candied peel dotted through. Deliciously rich but not too sweet and beautifully dense. I wish I could convey the comforting weight of this piece through the photo. It’s known as Sernik Krakowski if you’d like to track some down.

Remembering my dad and what would have been his birthday with some of his favorite Polish food
Had the beef pierogi we bought at Delikatesy Mis in Cardiff last week for today's lunch, with some pesto. Nice enough but a touch bland inside, will try them fried instead of boiled next time and maybe one of their other fillings.
I'm at a Friday night pierogi-making gathering and our dough is being amusingly stubborn, so we may end up making some improvised Polish chicken-mushroom pancakes as a backup in case our dough experiment fails. Regardless of what happens, whatever we make will be delicious!
