Follow-up poll:
For those who answered ‘Maple Syrup’ (real is redundant for those of us from sugar bush regions),
What do you consider a ‘reasonable’ amount of syrup for 2 15cm/6” waffles?
I notice that Maple Syrup appears to have increased in price again
The Strategic Maple Syrup Reserve
Canada maintains a Strategic Maple Syrup Reserve in Quebec, with 77,000 barrels. Created in 2000 by the Federation of Quebec Maple Syrup Producers, this stockpile regulates the syrup supply and prices. In 2012, thieves pulled off a daring heist, stealing syrup worth $18 million in what became known as the Great Canadian Maple Syrup Heist.

To anyone who taps maple trees to harvest maple syrup, how was this recent season? Was it a good harvest?
If memory serves, we had some good weather for it, yoyo-ing around freezing for a good couple of weeks.

@kalleboo That is a hot take! #maplesyrup for the win
The original Lyle’s Gold Syrup’ logo had a rotting lion carcass swarmed by bees :)

[Halifax, NS] Urban sugaring a success for one Haligonian, but city not so sweet on idea

* former resident: great coastal city
* excellent universities, culture (food; music; diversity, e.g.1980's influx of Buddhists)
* scenic beauty; tourism; festivals; fishing
* historical importance: e.g. WWII convoy staging
* longish winters; like all places healthcare under strain
“I should pour a little of this back onto the roots,” they say as we dip spoons in the maple syrup and argue about whether to reduce it more. “Pay it back.” “Why wouldn’t you give it something from your world?” I ask. “It gave you something of itself.” “You want me to give it blood?”
I know there are super #MapleSyrup experts out there, can folks share tips? I was not happy with the 5/16 alimunum spiles. I want stainless. I'm using bags because I think tubing will get ripped out by deer in no time. Are there alternatives?
And reducing, what are the options? I tried a fire and pot but lost patience and though i can get tons of firewood, it worked out to be easier to use a propane heater.... Also, i have vacuum pumps and lots of experience with vacuum bagging.

So.....
#MapleSap officially "buddy" in northern #TwinCities as of last Thursday.
First Season over.
Damn.
Out of around 19 gallons of sap gathered from four trees, starting in late March, we burned about 38 ounces of sap and came away with 12 ounces of #MapleSyrup
Lots of lessons learned! Start earlier, careful cooking at the end, and also, i have another 4 or 5 trees to tap next year. 60-80 gallons of sap is not out of the question. Maybe 2 gallons of syrup if we do it right? More?
It’s my first columnaversary as CBC-KW’s food columnist! What better way to celebrate a year of exploring local foods than with maple syrup? Talked about terroir, this year’s harvest, and there’s a Salted Guinness Maple Caramel Syrup recipe that’s mighty good on ice cream!

Bottled the last bit of #maplesyrup for the year. Just over 47 gallons made. A new best for me, but only due to adding more trees. Things learned, met new people. Found more opportunities for next year.
Just acquired a gallon (3.78L) of gold maple syrup. #maplesyrup #maple
Our maple syrup season has ended. We tapped our tree on Feb 22, which was a month later than normal. This winter in Massachusetts was consistently below 38° which is not ideal for sap flow.
We harvested 28 liters of sap which after boiling down, gave us a little over a pint of syrup. This really drives home why it’s so expensive!
Sap Totals:
2025 February 22 - March 23 = 28 liters
2024 February 1 - March 17 = 30 liters
2023 January 22 - March 12 = 36 liters
We have 2025 syrup, that means we must have fresh 2025 johnny cake!
Is this the last boil of the season? I'm tired. Peepers are singing, so the end is very near. #maplesyrup #wsmaple
