I’m attempting to bake proper hot cross buns for the first time. It’s one of the things I miss most since leaving the UK, just being able to buy them in the supermarket!
Some US stores sell something they call “hot cross buns” but THE BUNS ARE A LIE!! 
Not the same thing at all!
Apparently adding dough from the host to the kneaded bread gives it the magical power of not going mouldy.
