½ oz lemon juice
1 oz pineapple juice
¼ oz simple syrup
¼ oz coffee liqueur
½ oz coffee-infused Campari*
1 oz Jamaican Blended Aged Rum ❸
Garnish: pineapple frond, coffee beans
Method: Combine all ingredients in a shaker with ice and shake. Double strain over a big rock and garnish.
A really lovely jungle bird riff when you need a pick-me-up in the afternoon. A little caffeinated, a little boozy! The coffee-infused Campari is really delightful on its own and absolutely stands out in this spec. First seen from IG subtletiki.
* coffee-infused Campari: add whole beans to Campari in a jar and let sit 12-48 hours depending on how strong you want the infusion. I go all the way. Strain and discard beans; the Campari is still shelf stable.
