I just love their climate blend <a href="https://applenotthecomputer.online/tags/wholewheat" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>wholewheat</span></a> flour. It makes such good bread. Especially the crust. For Friendsgiving last night I baked these lovely toasted almond flour <a href="https://blimps.xyz/tags/shortbread" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>shortbread</span></a> thumbprint <a href="https://blimps.xyz/tags/cookies" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>cookies</span></a>, and made them <a href="https://blimps.xyz/tags/GlutenFree" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>GlutenFree</span></a>! Apricot or raspberry preserves filling them. Lovely crunchy treat!</p><p>Maybe less almond extract next time. Has a chocolate ganache on top with mascarpone whipped cream, and the bottom crust is a genoise cake brushed with espresso syrup!</p><p>It fell over slightly, and was a little too warm when I sliced it -- I really need like, perfectly sized boxes for putting these in even packed fridges, or to freeze them -- so it didn't slice cleanly.</p><p>Would make double the amount of mascarpone whipped cream next time and spread it on with an offset spatula instead. I'd also skip the espresso brushing of the cake and probably leave it plain without brushing, I think the cheesecake itself contributed plenty of moisture there.
