Delicious Dinars - an easy and really delightful recipe for a veggie/vegan carrot salad from the 13th century cookbook Al-Wusla (Scents and Flavors).

To be frank: I hate cooked carrots, but this is a recipe for haters fo cooked carrots. The vegetables still have a bite and are coated with a rich and creamy dressing with walnuts, tahin, vinegar, mint and parsley. I sweetened the dressing with honey but to get it full vegan you can use date syrup or modern alternatives.

Was ich daran am Meisten liebe? Die Honigbutter, die sich mit Orangenblütenwasser und Aprikosenfruchtsaft zu einem dicken Sirup verbindet. Göttlich! Übrigens, Aprikosensaison hin oder her: Das Rezept ist hervorragend dafür geeignet, um Aprikosen zu verarbeiten die zum Essen doch noch zu sauer sind.

Dinner tonight Idra, which is a meat and rice dish with lots of whole garlic. It is usually baked in the oven in a large clay pot, or if you happen to be in Jericho, large brass pots.
This is vegan obviously, spicy, garlicky rice with chickpeas, soy curls and vegan coconut yogurt with some dried mint.
