This second tour was really interesting. Guide Mateusz introduced us to his district of Nowa Huta ("new steelworks"). It was built as a planned settlement in the early 50s to be an utopic ideal city next to Kraków, featuring a lot of concepts today known as the 15-minute city. Since the 70s it is a district of Kraków, still one of the greener ones.

I feel like my bread is improving! My third bread- this one is in the fridge now. Planning on baking it sometime tomorrow. I used the scale to do a few tests on this new bag of flour to find the optimal ratio of water to flour to use for the consistency of the dough. I do think I may have used a bit much starter- but apparently that's good for cold an hey now it's snowing here in Brooklyn :)

The restaurant supply has some giant pots- foot for comparison. I really timed it perfectly with biking there today- it was sunny and didn't seem too cold.

(Obviously there is lot to improve, local shops and frequent public transport are lacking, cycle lines not separated etc. And because Paris citizens are unfamiliar with this kind of coexisting and cooperation, so right now everyone - especially cyclists - just stubbornly drive around as if all streets would be their personal property. Hopefully they will learn with time...)

Photos from the plane window yesterday.
Did you know that Spain is the world's largest exporter of olive oil and 2nd largest of wine? The port of Valencia alone ships to 168 countries!
And while the metro area has over 2 million people, it manages to be a great "15-minute city" without being excessively dense.
You can see from this second picture that there aren't many buildings over ~7 floors. What you can't see is that it's mostly mixed-use zoning with schools, grocery stores, offices, and more all mixed with housing.
